Coffee levellers or espresso distributor tools are designed to eliminate air pockets in the coffee puck, otherwise, you will see channelling occur in a Naked Portafilters. Channelling would occur when the pressurised coffee would make its way into the least compressed part of the puck.

Before you tamp the coffee - using a leveller will allow you to obtain the correct density, which will minimize channelling and increase coffee extraction, ensuring greater consistency in the amount of espresso served.

Typically the work process for a level distributor tool is Grind beans directly into the Portafilter Baskets and de-clump with a Barista Tools, to remove clumping formed by static in the grinding process. Then you would use a leveller tool such as Motta to remove the air pockets and finally, you would tamp to apply the correct pressure to get an even coffee puck.

A typical Coffee Distribution Tool distributor would be approx. 400 grams to compress the grind and have 3 angles slopes. Many levellers don’t need a Coffee Tampers once you have correctly distributed the coffee into the basket, as the 400g of weight is enough to compress the puck.

A great advantage of a leveller is a perfectly flat surface to tamp upon, creating more consistent puck density. Baristas can leave a slight mound or indentation in the coffee, which means they tamp down inconsistencies in the puck density. Because the distributor rests on the basket – you will always have a flat surface and maximum extraction.
